Good morning. Okay, you have exactly one more week until Christmas.

The East Carroll Parish Police Jury could be faced with a very large deficit if things don’t change between now and the end of the fiscal year. This was the message that the ways and means committee received from Cindy Thomason, the jury’s audit manager from Allen, Green and Williamson CPA Firm. Thomason addressed all of the committees via phone at the meetings held Wednesday, December 3.

The East Carroll Parish School Board held a short regular meeting last Tuesday, December 2, at the school board office. Board members considered a perfunctory agenda that approved normal agenda items, including adoption of minutes and a number of policies for the school system. The board also accepted the sole bid of Robertson Produce for produce for the schools.

Good Thursday, everyone. It’s been quite a week, and as we move closer to Christmas, we get more and more entrenched in Christmas activities.

1 cup pecans , chopped 1/3 cup Kentucky bourbon ½ cup unsalted butter, softened 3 cups powdered sugar 3 cups semi-sweet chocolate chips 24 pecan halves Add pecans and bourbon to a covered container overnight to soak. Drain the pecans. Beat butter and sugar until well combined, then add in the pecans and stir well. Refrigerate overnight in a covered container. Add the chocolate chips to a microwave-safe bowl and microwave for 30 seconds, then stir and microwave for 15 seconds until smooth. If needed, microwave an additional 30 seconds. Roll into 1-inch balls. Dip the pecan balls into the chocolate, tap off excess chocolate, and place back onto baking sheets. Place a pecan half on each ball (while chocolate is still wet) and leave to harden. Let candies fully harden for 30 minutes in the refrigerator before eating or storing in covered containers for holiday gifts.

Lee Broussard marked his 100th birthday with a trip to the World War II Museum in New Orleans where he received special attention as a Louisiana veteran who stood on the deck of the USS Missouri for the signing of the end of the war with the surrender of the Japanese. He also was able to see in person his journal from his time in the Navy, which he donated to the museum, and is showcased along with a photo of him in uniform. Broussard was feted further with a party at Barker Hall following a mass in his honor last Saturday, December 6. Local friends and family as well as family who drove and flew long distances, some of them to meet him for the first time, gathered and sang happy birthday to a real hero. Happy Birthday Mr. Lee from all of us at East Carroll Banner, and congratulations on such a milestone.
