Celebrating the lives of East Carroll residents

I want to join everyone else (and I mean a lot of folks) in wishing Ebony McKeel a very happy birthday. It’s hard to believe looking at her, but Ebony turned 47 last Saturday. I am glad you had a great birthday, Ebony, and here’s to many, many more.

Aunt Betty's Meatloaf

2 lbs. ground beef 1 can Hunt’s Meatloaf Fixing 1 sleeve Ritz crackers (crushed) 2 eggs 1 can Hunt’s Tomato Sauce 1 envelope Lipton Onion Soup Mix 1 can Cream of Mushroom Soup Salt and pepper to taste Mix together ground beef, crushed crackers, egg, onion soup mix and cream of mushroom soup.

Potato Salad

8 - 10 potatoes 10 - 12 eggs 1 ½ cup mayonnaise 3 tbsp mustard ½ jar sweet pickled relish Salt & pepper to taste Peel, dice and boil potatoes. Drain well. Boil eggs, add salt; after eggs are boiled, put 2 tbsp of baking soda into the water. Let sit for 10 minutes. Pour water off and rinse with (cold) water. Eggs should peel easily. Put eggs into a bowl and crush them up. (I use my potato smasher to crush the eggs like I want it). Add potatoes, mayonnaise, mustard, relish and salt and pepper into the bowl. Mix well. Continue to add mayonnaise, mustard and relish to taste. Enjoy!

Bonnie Miller serves family recipes

When you have cooked for hundreds of school-aged children for 33 years, you pick up a thing or two about the culinary arts. Bonnie Miller has done just that. She worked from March of 1983 until her retirement in August of 2016 for the East Carroll Parish School Board in the lunchrooms at Northside Elementary School and Griffin Middle Academy, most of that time as kitchen manager.

ARRESTS

Arrests as of June 9, 2025: East Carroll Parish Sheriff’s Office: 6/1/25 - Melonie Davis, 35, charged with theft, simple criminal damage to property. Bond set at $1,500.

LDWF asks public to report any fish kills

The Louisiana Department of Wildlife and Fisheries (LDWF) reminds the public that high-water temperatures, extended cloudy weather and storms may lead to inland (freshwater) and nearshore marine fish kills in waterways across the state. Fish kills should be reported to the Department by following the instructions at https://www.wlf.louisiana. gov/page/fish-kills Since warm water has a lower capacity for storing oxygen than cool water, oxygen levels required to support fish life in shallow Louisiana aquatic habitats often exist within a delicate balance. Certain conditions can cause the scales to tip in the wrong direction, trapping fish in hypoxic (low oxygen) water, resulting in a fish kill.
